Our Cuvees

I willingly installed a 2000 kg press to facilitate single vineyard vinifications.

The concept behind my cuvees is as following: if the harvest is balanced, the winemaking will be easy. I have chosen to vinify in amphora and barrel.

After pressing, the must runs off into amphora (stand alone or dug-in) or in oak barrels. The fermentation using natural yeasts may last several months, with regular lees-stirring. The wines remain on their lees and will be able to take the time to reveal their character.

In June or July, the wines are bottled without fining or filtering. The malolactic fermentation does not take place to provide freshness and maintain the soul of the terroir. Not cold-stabilizing. 

These cuvees will not have the stereotypical flavors of the “large Champagne Houses”. You will discover wines with a strong personality, finesse and purity as well as an unusual aromatic precision with floral and tropical fruit notes. All cuvees are single vintage.

Every year I have the need to create new cuvees, because the aim of my champagne is to reflect each part of the terroir and  to provoke emotions.

Today we have more than 20 different cuvees, of which some are private cuvees, where the customers create the blends tasting the vins clairs in barrel.

Since 2013, the whole estate has been certified Ecocert and Demeter.


Les Meuniers de Moussy

Single vintage cuvee from two plots, les Chardeloups and le prés du Bois located on the south facing slopes of Moussy, with iron-rich clay and sandy soils.

Les Gouttes d’Or

Single vintage cuvee from two plots chemin des Gouttes d’Or and rue des Gouttes d’Or located in Epernay: 50% Chardonnay, 25% Pinot Noir & 25% Pinot Meunier. Guide des vins Bettane + Desseauve 2018

Rosé de Saignée

Single vintage cuvee from several plots in Moussy. A blend of 90% Pinot Meunier and 10% Pinot Noir, macerated for 14 hours.   Champion du monde 2017 EUPOSIA in Verona.

Elia 1er Cru

Single vintage cuvee, 100% Chardonnay from Pierry Premier Cru

Single vintage cuvee. A Blanc de Noir blend of 5% Pinot Meunier and 95% Pinot Noir from Mardeuil. 75% comes from the lieudit Les Vossenelles planted in 1964 et 25% from the lieudit les Chapottes planted in 1976

Single vintage cuvee. A blend of 92% Chardonnay from Vauciennes & 8% Pinot Meunier from Mardeuil, Lieudit La Ronce. 50 hours of maceration to obtain the right extraction.

7ème Ciel

Single vintage cuvee. Brings together the 7 authorized Champagne grape varieties. Pinot Blanc, Fromenteau, Arbane, Petit Meslier, Pinot Noir, Pinot Meunier & Chardonnay from the Moussy plots « Le Potage » and «la Loge Pinard »  with clay-rich Silex soils.


Honoré Charlot Grand Cru

Single vintage cuvee. 100% Pinor Noir from Aÿ  Grand Cru.

Fruit de ma Passion

Vintage Cuvee. 2 plots in Mardeuil La Genette & Les Chapottes. The final blend consists on average of 55% Pinot Meunier, 30% Chardonnay & 15% Pinot Noir.

Single vintage cuvee made since 2016 from the lieudit LA DUNE in Mardeuil, planted mid-slope in 1955. 100% Pinot Meunier grown on Iron-rich clay soils with sand and crushed SIlex.

Single vintage Rosé de Saignée from a vineyard in lieudit LA DUNE in Mardeuil, planted mid-slope in 1955. Macerated for 14 hours. 80% Pinot Meunier & 20% Pinot Noir

Or des Basses Ronces

Single vintage cuvee: 100% Chardonnay from the 40 ares Lieudit « Les Basses Ronces ». Average vine age: 25 years. Two different rootstocks: 41 B & Fercal.  Brittle chalk at a depth of 30 cm.

Single vintage without added sulfites. The cuvee differs from year to year depending on my expectations. Until 2015 the cuvee was vinified in barrel and from 2018 in amphora.

The 2014 vintage is a blend of 95% Chardonnay & 5% Pinot Noir.

Single vintage cuvee from a 18-are Clos in Epernay with two different soil profiles. 50% Chardonnay mainly grown on chalky soil and 50% Pinot Noir on clay.

Blend of grape must and wine spirit (fine) distilled by us in the communal alembic. Aged in oak barrels for more than 4 years, not filtered at bottling.
Aperitif with honey and walnut aromas, ideally paired with melon or a chocolate desert.
